Chocolate Caramel Porridge

For the Porridge

• 50g Rice flakes
• 2 tsp Oat bran
• 1 tbsp Cacao powder
• 1 tbsp Coconut milk powder
• 0.5 tsp Vanilla Paste
• 2 pinches of Salt
• 200ml Oat Milk

Suggested Toppings:

• 1 fresh banana, sliced
• 1 tbsp Cashew Butter or Peanut Butter
• 6 Freeze Dried Raspberries, crumbled
• 2 tsp Cacao Nibs
• a few pinches of berry powder such as Strawberry or Blueberry

For the Caramel Sauce

• 1 Date
• 0.5 tsp Cacao powder
• a pinch of Salt
• A dash of Oat Milk to mix.

Method

1. To make the caramel mash the date in a small bowl with a fork until smooth, stir through the cacao and salt, adding a little mix to help form a smooth caramel.
2. Pour the porridge ingredients into a pan, place over a medium heat and stir until thickened. Pour the porridge into a bowl.
3. Arrange the sliced banana down one side of the bowl and then dollop the chocolate caramel and nut butter alongside.
4. Scatter over the nibs, raspberries and berry powder. Enjoy!
