These mushrooms are high in fibre and low in fat. They expand considerably on soaking and will make a nutritious and flavoursome meal.

Directions

Shiitake mushrooms are suitable for use in stir-fries, soups, broths and similar dishes.

Soak the mushrooms for 15 minutes in warm water. Remove the hard woody parts of the stems if there are any, and slice if necessary. Cook as desired.
