Easy Summer Salads
Summer is the perfect time for salads, quick and easy dishes that mean you spend less time in the kitchen and more time enjoying the nice weather. The fresh, seasonal produce is in abundance, and there are endless possibilities when it comes to creating a delicious and refreshing dish. Salad often gets a bad rap, often being called boring or not filling. If made correctly then salads are a great source of satisfying protein as well as being really flavourful.
Here are a few of our favourite summer salads:
Looking for a delicious and nutritious salad? Try our protein-rich carrot and lentil salad! It’s made with carrots, green lentils, celery, walnuts, and kale, and tossed in a simple vinaigrette dressing. It’s perfect for a light lunch or dinner. We love how satisfying this salad it, it’s packed with protein and fibre meaning it keeps us feeling fuller for longer!
Our couscous salad is a delicious and refreshing dish that is perfect for a light lunch or dinner. It is made with couscous, plump raisins, roasted vegetables, and a gorgeous dressing. The salad is then tossed with chopped mint and parsley for a touch of freshness. It makes a great stand alone meal, but also pairs wonderfully with our pumpkin hummus and flatbreads.
Butternut Squash, Walnut, Quinoa and Kale salad
This salad is a delicious and nutritious dish that is simple to make and tastes incredible. It is made with roasted butternut squash, kale, walnuts, and a creamy dressing. Don’t skimp on massaging your kale – not only does it make the leaves more tender, it also reduces the bitterness.
We love making food that’s light, yet filling! It makes you full for longer and fuels you with energy for many hours! Our quinoa salad is our go-to for long lasting energy. It’s packed with crunchy, fresh vegetables and fresh herbs. It’s like summer in a bowl.
Roasted Vegetable, Bean and Millet Salad
Millet is a healthy and versatile pseudo-grain that can be used in a variety of dishes, including salads! This millet and roasted vegetable salad is a delicious and nutritious option that is really easily made and is super filling. You can add whatever takes your fancy. We love combining roasted butternut squash, spiced black beans, courgette, spinach and mushrooms, but you can adjust to suit your preferences.
Black Quinoa Salad with Celery Seed Dressing
This fantastic salad is ideal as a light lunch, and serves 2. Quinoa makes a great alternative to rice or cous cous, and is high in protein, a good source of fibre, and free from gluten. Black quinoa tastes the same as white quinoa, and has the same nutritional profile, but of course adds a striking colour to any meal.
We used citrus fruits in this salad, but you can use cherry tomatoes, artichokes, nuts or other salady ingredients. Coconut sugar should be added to taste – around 3 or 4 teaspoons – to offset the acidity of the lemon juice and the citrus fruits. Coconut sugar has a rich taste, like a subtle version of muscovado sugar.
This gorgeously, vibrant salad is the perfect summer side dish. It’s a firm favourite in the HS office, we enjoy it with everything from quiches to jacket potatoes. It also goes fantastically well with rocket and roasted chickpeas. It requires no cooking, and can be served straight away. Although allowing the salad to rest in a fridge overnight, allows the garlic to really infuse with the beetroot.
Fresh Spring Rolls with Peanut Dipping Sauce
OK we know, this one isn’t your traditional ‘salad’ dish, it’s more like a salad wrap. It is a great way of getting your 5 a day in a new and delicious way, so we feel it deserves a spot on this list. You can also sub the rice wrappers for iceberg lettuce or your favourite green leaves!
Our sesame seaweed salad is so simple to make, and tastes delicious. This dish is packed with umami flavours making it incredibly moorish. Enjoy as an afternoon snack or serve as a tasty side dish alongside sushi.
Add chilli flakes for an extra spicy kick! You can also stir in freshly grated carrot or thinly sliced radishes.
We’re really pushing the concept of a salad with this dish, but you can enjoy it hot or cold (after cooking it). It IS packed with veggies and look it’s one of our favourite recipes so we are never going to miss an opportunity to boost about it! Is it a traditional salad? Nope. Should you add it to your meal planner this week? Absolutely.
