Unfortunately it’s common for these to be absolutely loaded with sugar, salt and saturated fats! We all love to have a foodie blowout every now and then, but there are certain steps you can take to cut down on the ingredients that spell disaster for your health and waistline while maintaining (and even boosting) the tastiness factor!

Who doesn’t love a great big fluffy stack of pancakes? These wonderful treats are made with gluten-free baking powder, which gives them impressive lift while dispensing the need for any eggs. They also contains lovely, rich, unrefined organic coconut sugar which makes them super-sweet while spiking your blood sugar significantly less than white cane sugar. Tofu Scramble with Tomatoes & Basil
Created originally as an alternative to scrambled eggs, tofu scramble has become a much-loved dish in its own right and no longer a mere ‘alternative’. This dish produces very moreish soft curds of tofu which are delicately spiced and absolutely perfect served on a slice of good quality bread. Tofu is full of protein, and doesn’t contain nearly as much fat as eggs – and with the added spices and the lovely, savoury nutritional yeast flakes in this recipe, it’s also full of flavour as well. Quick and easy to prepare, this is a bona fide brunch champion!
Brazil Nut, Mango & Coconut Granola
Here’s a bowl of goodness you can really dive into fully guilt-free! It’s based on oats, which are wonderfully good for your body, and it’s packed with Brazil nuts, which also offer an amazing array of health benefits. The mango slices give it an awesomely tangy sweetness as well as providing vitamins C, K and A (which is great for eye health). There’s no sugar either – just the deep flavour of natural maple syrup. The sunflower seeds add yet more taste as well as a super whack of essential minerals and texture, and the little pinch of cinnamon is the icing on the cake!
These heavenly muffins go down a real treat and there are never any left when everyone’s gone! Banana is perfect in a muffin as it not only provides sweetness and flavour but it moist texture actually cuts down on the need for fat too. These are also studded with our wonderful chewy, tangy organic cranberries, and by using nutritious, cholesterol-free soya milk we’ve ensured these muffins are 100% vegan while remaining monumentally tasty and moreish!
Apple & Cinnamon Spiced Chia Pudding
Chia seeds are tiny little bundles of nutrition, containing healthy Omega fats, fibre, minerals and all kinds of other rather great health benefits – and best of all, they come with the magical power to thicken liquids into a creamy, pudding-like consistency. These delectable little pudding pots contain the goodness of oat milk and harness the splendid affinity apple has with cinnamon. The pecan nuts provide texture and stud the pudding with their unique flavour and crunch.
Vegan Scones with Nuts & Maple Caramel
No cane sugar… no dairy…. but brimming with heavenly flavour! Made with unrefined pure coconut sugar and getting a burst of richness from the oat cream, these eminently munchable treats get a topping of deeply-flavoured maple syrup and a handful of walnuts which are one of the best things you can eat. Fresh Spring Rolls with Peanut Dipping Sauce
Here’s something a little exotic to delight the more adventurous foodies at the brunch table. Most of us have had traditional deep-fried spring rolls, which can be delicious but are understandably full of fat. We’ve used ‘fresh’ spring roll wrappers for this recipe instead, very simply blanched in hot water. The only fried element is the pan-fried tofu, cutting down significantly on levels of fat. The peanut dipping sauce contains healthy fats and loads of nutty goodness, while the pickled daikon lends the dish a piquant, tangy crunch which will make your taste buds rejoice!
Brunch wouldn’t be brunch without a pile of warmed-through, hearty bread rolls – and here are the perfect ones to serve. Soda bread is amazingly easy to make and needs no kneading, no hanging around waiting for it to rise – no faff at all! Combining the goodness of the sunflower seeds, pine kernels and pumpkin seeds in the organic 3-seed mix with the resonant, lip-smacking flavour of barley malt extract and a few chopped-up sun-dried tomatoes, these rolls look great and taste even better.
Porridge is one of the ultimate comfort foods, and happily, as long as it isn’t made with oodles of dairy fat or other nasties, it’s really, really good for you too.
