Gluten-Free Simnel Cake Slices
Simnel cake has been a traditional Easter baking staple since medieval times, eaten in the UK and Ireland. There are plenty of local variations to the recipe, but common to all recipes is the use of fruit and marzipan, including the topping of 11 marzipan balls, which represent the apostles (minus Judas) in Christian mythology. Here we’ve created a single-serving variation on the larger cake, using unrefined coconut sugar for sweetness. It’s dairy-free and gluten-free, and if you’re feeling adventurous you can even use hazelnut marzipan or cashew marzipan instead of the traditional almond one.
It doesn’t take much effort to buy cheap chocolate eggs these days, but unfortunately, if you do, it’s very likely they’ll be full of refined cane sugar, unsustainable palm oil and a sizeable array of E-numbers. So why not make them yourself using organic, sustainable ingredients? This wonderful recipe for a raw chocolate Easter egg is one we keep coming back to every year, and combines the caramelly sweetness of unrefined coconut sugar with organic Peruvian cacao powder to produce a taste sensation!
Kids and adults alike are bound to be delighted with these delicious bite-sized treats. They’re made from raw chocolate sweetened with unrefined coconut sugar, which lends them a luscious toffee flavour, and once you bite into one, you get a surprise taste double-whammy from cranberries and roasted hazelnuts. If you’re avoiding cacao, these can also be made using our recipe for carob bars.
