American Style Raisin Pancakes
Thick pancakes with plump raisins and maple syrup.
Gluten Free Self-Raising White Flour 1kg (Doves Farm)
200g gluten-free self-raising flour
Organic Sultanas 1kg (Sussex Wholefoods)
50g sultanas
Pure Bourbon Vanilla Extract 100ml (Littlepod)
Half a tsp of vanilla extract
Mixed Spice 50g (Hampshire Foods)
Quarter of a tsp of mixed spice
Other Ingredients
2 eggs
300ml milk
Method
1) In a large bowl, sift the flour, then add the eggs and milk and stir to combine. Then add the vine fruit and stir again.
2) Take a small frying pan and heat on medium-high heat for a minute or two. You do not need oil if you have a good quality non-stick pan. Otherwise, add a drop of oil the pan and heat before adding the batter.
3) After a minute or two, Spoon the batter into the pan. Cook for a few minutes until the base is golden in colour and small bubbles appear on the surface.
4) Use a spatula to flip the pancake over and cook the other side until golden.
