Autumn Sunset Cocktail
- Rich strawberry-based non-alcoholic cocktail.
- Makes enough for 2 drinks.
Pure Maple Water, Organic 355ml (Drink Maple)
125ml Maple Water, plus another 200ml for ice-cube making.
Apple Juice, Organic 1 Litre (Biona)
125ml Pure Apple Juice
Amber Maple Syrup, Organic 250ml (Acadian Maple)
2 Tbsp Maple Syrup
Cinnamon Powder 50g (Hampshire Foods)
½ tsp of Cinnamon Powder
Freeze Dried Strawberry Powder 50g (Healthy Supplies)
1 Tbsp Freeze-dried Strawberry Powder
Vanilla Paste 100ml (Little Pod)
2 tsp Vanilla Paste.

Method
- Fill an ice-cube tray with Maple Water and freeze.
- In a lidded jug, sports bottle or cocktail shaker mix the 125ml Maple Water with the Apple Juice.
- Add the Strawberry Powder, Cinnamon Powder, Vanilla Paste and Maple Syrup. Shake vigorously. Taste and add more Maple Syrup if you wish.
- Empty 10-12 ice cubes into the centre of a clean, dry tea towel. Bring the corners together and twist to create a closed bag. (We also put our ice-cubes inside a freezer bag first and then wrapped it in the tea towel).
- Holding the filled tea towel firmly find a very hard surface, such as a brick wall or granite work surface and bash the tea towel repeatedly until you can feel the cubes have started to disintegrate.
- Open up the towel on a clean work surface and spoon the crushed ice into your chosen glass.
- Now gently pour over the juice mix. You can sieve the mix as you pour if you wish to eliminate the strawberry seeds. Serve immediately.
