100g Deodorised Coconut Oil
Gluten-Free Baking Powder 130g (Doves Farm)
¾ tsp Baking Powder
Mixed Spice 50g (Hampshire Foods)
2 ½ tsp Mixed Spice
Cinnamon Powder 50g (Hampshire Foods)
1 ¼ tsp Ground Cinnamon
Ground Cloves 50g (Hampshire Foods)
¼ tsp Ground Cloves
Vanilla Extract Nielsen Massey 118ml
1 ¼ tsp of Vanilla Extract
Other Ingredients
- 250g sunflower margarine.
- 190ml of boiling water.
- Juice and zest of 1 ¼ large oranges.
- Juice and zest of 1 ¼ lemons.
- 5 large eggs, beaten.
Method
- Double line your cake tin with grease proof paper/baking parchment and a skirt of brown parcel paper tied with string. Ensure both the grease proof paper and the brown paper are double the height of the cake tin to help prevent the sides and top from burning/becoming too dark.
- Pre-heat the oven to 140°c Fan/ Gas Mark 2.
- In a mug or jug leave the two Earl Grey teabags to brew in the 190ml of boiling water.
- Put the Sultanas, Raisins, Cranberries, Cherries, Orange Juice, Orange Zest, Lemon Zest, Lemon Juice, Mixed Spice, Cinnamon, Cloves and Vanilla Extract into a large mixing bowl.
- Once the tea has developed a deep dark colour, squeeze the teabags and remove them. Add the tea to the mixing bowl and stir so that all the ingredients are well mixed.
- Melt the coconut butter and margarine in the microwave on a medium heat for 30 seconds. Remove and stir and microwave again for a further 20 seconds or until the mixture has completely melted.
- Pour over the fruit and mix thoroughly. Then stir in the flour, ground almonds, flaked almonds and baking powder and finally the beaten eggs.
- Combine thoroughly and pour gently into your cake tin.
- Bake in the centre of the oven for 2 hrs and then reduce the heat to 130°c Fan/ Gas Mark 1½ and continue to bake for a further hour or until a skewer comes out a little sticky when inserted into the centre of the cake and the surface has developed small cracks.
- Cover and decorate the cake once the cake has completely cooled, but soon after baking.
- Since this cake contains no alcohol it is best prepared as near to your celebration as possible.
