Blackberry & Raspberry Ice Lolly
Pure fruit lollies made with wonderfully refreshing coconut water!
Makes 3-4 lollies.
Freeze-Dried Blackberry Powder 100g (Sussex Wholefoods)
2 tbsp freeze-dried blackberry powder
Freeze-Dried Raspberry Powder 100g (Sussex Wholefoods)
2 tbsp freeze-dried raspberry powder
Vanilla Paste 100ml (Little Pod)
1 tsp vanilla paste
Coconut Water, Organic & Fairtrade 350ml (Tiana)
350ml coconut water
Coconut Nectar, Honey Alternative Organic 300g (Coconut Merchant)
4 tbsp coconut nectar

Method
1) Pour the entire bottle of coconut water into a liquidiser.
2) Add the blackberry powder, raspberry powder and vanilla. Whizz for 20-30 seconds.
3) Add the coconut syrup. Blend for a further 20 seconds and taste. Add more to taste.
4) Pour the mixture into your lolly mould and freeze for a minimum of 5 hours or until solidified.
5) Enjoy straight from the freezer!
