125ml Birch Water, plus 200ml for ice-cube making - basically you need 2 bottles!

1 tsp Aniseed, roughly ground.

Other Ingredients

    Method

    1. Fill an ice-cube tray with Birch Water and freeze.
    2. In a lidded jug, sports bottle or cocktail shaker mix the 125ml Birch Water with the red grape juice.
    3. Add the Cranberry and Blackcurrant powders and shake vigorously.
    4. Mix in the stevia and sprinkle in some aniseed. Shake again. Taste and add more aniseed and/stevia if you wish.
    5. Empty 10-12 ice cubes into the centre of a clean, dry tea towel. Bring the corners together and twist to create a closed bag. (We also put our ice-cubes inside a freezer bag first and then wrapped it in the tea towel).
    6. Holding the filled tea towel firmly find a very hard surface, such as a brick wall or granite work surface and bash the tea towel repeatedly until you can feel the cubes have started to disintegrate.
    7. Open up the towel on a clean work surface and spoon the crushed ice into your chosen glass.
    8. Now gently pour over the juice mix. You can sieve the mix as you pour if you wish to eliminate the aniseeds, but we left them in for a stronger flavour. Serve immediately.
