1 cup brazil nuts
Organic Coconut Flakes (250g) - Sussex WholeFoods
1 cup coconut flakes

1 cup mango slices
Organic Sunflower Seeds (1kg) - Sussex WholeFoods
1/2 cup sunflower seeds
Cuisine Coconut Oil 610ml, Organic & Odourless (Biona)
1/4 cup melted coconut oil
Maple Syrup, Organic 250ml (Meridian)
1/4 cup maple syrup
Organic Ceylon Cinnamon Powder (100g) - Sussex Wholefoods
1tsp cinnamon powder

Method
- Pre-heat the oven to 150°C.
- Melt the coconut oil and maple syrup in a pan over gentle heat. Add cinnamon powder and stir well.
- Chop your brazil nuts. Mix up the jumbo oats, brazil nuts, coconut flakes and sunflower seeds in a big bowl. Add coconut oil, mix and stir well.
- Line a flat baking tray with baking paper, spread your granola across the baking tray and place in the oven. Bake for about 20 minutes, stirring every 5 minutes to make sure the granola cooks evenly.
- Chop your mangoes.
- Remove from the oven and allow to cool before adding the mangoes.
- Transfer into an airtight container and enjoy!
