Gluten-Free Buckwheat Puffs, Organic 250g (Sussex Wholefoods)
100g Buckwheat Puffs
50g of Organic Buckwheat Groats
Smooth Peanut Butter 1kg (Pip & Nut)
4 heaped tbsp peanut butter
Organic Maple Syrup 330g (Meridian)
3 tbsp maple syrup
Organic Extra Virgin Coconut Oil 1 Litre (Sussex Wholefoods)
3 tbsp coconut oil (melted)
Organic Raisins 1kg (Sussex Wholefoods)
50g raisins
Organic Hulled Hemp Seeds 500g (Sussex Wholefoods)
2 tablespoons hulled hemp seeds.
Organic Golden Flax Seeds, Linseed 1kg (Sussex Wholefoods)
2 tbsp golden flaxseed
Fine Pink Himalayan Salt 1kg (Sussex Wholefoods)
A generous pinch of salt
Vanilla Powder Grade A 25g (Sussex Wholefoods)
1 teaspoon vanilla powder
Method
- Preheat the oven to 180 fan oven. Toast buckwheat until the grains become light golden in colour.
- In a large mixing bowl, combine the peanut butter and maple syrup. Microwave briefly if needed to make them easier to mix.
- Stir in the melted coconut oil, vanilla powder and salt.
- Add the buckwheat groats, buckwheat puffs, raisins, peanuts, hulled hempseeds and flaxseed to the bowl. Mix until everything is well combined.
- Press the mixture into a lined baking dish or tray, compacting it firmly.
- Refrigerate for a few hours or until firm.
- Once set, cut into bars or squares. Store in an airtight container in the refrigerator.
