1½tsp of Bee Pollen

3-4 Tbsp melted Coconut Oil

¼ tsp Cinnamon Powder, a sweet spice that enhances the natural sweetness of ingredients.
Vanilla Paste 100ml (Little Pod)
¼tsp Vanilla Paste. Another aromatic ingredient that will fool the tastebuds into thinking the food is sweeter than it is.

Method
- Grind the almonds in a coffee grinder or blender.
- Add the dates and apricots and chop into the/a blender or powerful liquidiser.
- Add the Coconut Oil, Pumpkin Seeds, the Bee Pollen and all the spices.
- Pulse the ingredients several times and then turn to a continuous blend until you have a thick paste, but with the pumpkin seeds still visible.
- Remove the paste from the blender/liquidiser and bring together into a ball.
- Cut into the mixture into quarters and from there rip off small amounts around 20g each.
- Roll into balls. Sprinkle the hemp seed onto a tray or plate then coat each ball in the seeds by rolling them around until each one is completely coated. Tip: A small amount of pressure whilst rolling will make coating easier.
- The balls are ready to eat. Store in an airtight container in a cool place. They will be at their best for a good week or so.
