Cashew Cheese Log

Honey or Maple Syrup to drizzle
Method
- Cover cashews with boiling water and leave to stand for at least 1 hour.
- Drain the cashews.
- Place cashews, lemon juice, nutritional yeast, coconut oil, white miso paste, garlic, and salt in a blender or food processor and blend until smooth.
- Add rosemary and thyme and blend until mixed in.
- Scoop the mixture onto a baking paper and form a log. Twist the sides and place in the fridge for 3 hours.
- Chop your cranberries and pistachios and mix on a plate.
- Remove your cashew log from the fridge and cover in fruit & nut mix.
- Serve immediately or keep in the fridge until you’re ready o serve.
- Drizzle with honey or maple syrup and serve with grissini or crackers.
