Cashew Cheese Log

This Vegan Cashew Cheese Log is a rich, creamy, and flavourful plant-based alternative to traditional cheese, perfect for a holiday spread or special occasion. Made with soaked cashews, nutritional yeast, lemon juice, and garlic, this dairy-free cheese has a tangy, savoury taste. It’s shaped into a log and rolled in a festive coating of crunchy pistachios and sweet, tart cranberries, creating a delightful contrast of textures and flavours. Serve it drizzled with honey and accompanied with crackers, fresh fruit, or veggies for an elegant, crowd-pleasing appetiser that’s entirely vegan and gluten-free!

Method

  1. Cover cashews with boiling water and leave to stand for at least 1 hour.
  2. Drain the cashews.
  3. Place cashews, lemon juice, nutritional yeast, coconut oil, white miso paste, garlic, and salt in a blender or food processor and blend until smooth.
  4. Add rosemary and thyme and blend until mixed in.
  5. Scoop the mixture onto a baking paper and form a log. Twist the sides and place in the fridge for 3 hours.
  6. Chop your cranberries and pistachios and mix on a plate.
  7. Remove your cashew log from the fridge and cover in fruit & nut mix.
  8. Serve immediately or keep in the fridge until you’re ready o serve.
  9. Drizzle with honey or maple syrup and serve with grissini or crackers.
