Cheery Cherry Banana Sushi
- Makes 4-6 bite-sized pieces.
- Sweet, tart, nutty and crunchy.
- No added sugar, naturally sweetened by the banana!
Almond Butter, Organic, Roasted 350g (Biona)
5-6 tsp of Almond Butter
Freeze Dried Sliced Cherry 100g (Sussex Wholefoods)
3 Tbsp Freeze-dried Sliced Cherries, roughly crushed.
Chia Seeds 1kg (Sussex Wholefoods)
2 tsp of Chia Seeds
Unsalted Pistachios (250g) - Sussex WholeFoods
2 Tbsp of Unroasted Pistachios, roughly crushed.
Other Ingredients
- Half a large banana.
Method
- On a chopping board, spread the almond butter liberally over as much of the length of the banana as possible. Roll it as you spread the nut butter.
- On a side plate spoon out the crushed cherries and roll the banana in the powder to coat thickly in the fruit.
- Sprinkle over the crushed pistachios and gently press them into the top surface of the coated banana.
- Prior to cutting, sprinkle over the chia seed and delicately press into the topping.
- Chill until ready to slice (these are best prepared up to an hour before serving). Slice into regular thickish bites and present as you wish.
