Organic Quinoa Grain 1kg (Sussex Wholefoods)
70g Quinoa
Organic Chickpeas 1kg (Sussex Wholefoods)
50g Chickpeas
Organic Italian Extra Virgin Olive Oil 250ml (Clearspring)
2bsp Olive Oil
Organic Lemon Juice 200ml (Biona)
1tbsp Lemon Juice
Fine Pink Himalayan Salt 500g (Sussex Wholefoods)
1/4tsp Salt (or more to taste)
Whole Black Pepper 100g (Sussex Wholefoods)
Freshly ground Pepper (to taste)
Organic Chilli Flakes 100g (Sussex Wholefoods)
0.5tsp Chilli Flakes (optional)
Other Ingredients
- cucumber
- tomato
- red onion
- yellow pepper
- fresh spinach or other greens
- parsley
Method
- Cook your chickpeas and quinoa.
- In the meantime, chop your vegetables into desired shapes.
- In a little bowl mix olive oil with lemon juice, salt, pepper and chilli flakes if you like spicier food.
- Mix all ingredients together in a big bowl.
- Serve and enjoy!
