Millet is a great alternative to pasta, rice or cous cous. It's a grain that's popular around the world. It is also suitable for those avoiding gluten. Use 1 cup per person.
Chinese 5-Spice 50g (Hampshire Foods)
An authentic blend of Cinnamon, Fennel, Star Anise, Cloves and Szechuan Pepper. Use a level teaspoonful.
Organic Tamari (Wheat-Free) Soy Sauce 150ml (Sanchi)
Tamari soy sauce is made without using wheat, and is otherwise indistinguishable from normal soy sauce!
Clearspring Toasted Sesame Oil - Organic 250ml
Toasted sesame oil is a common seasoning in Chinese cooking. Use about 3 level tablespoonfuls.
Organic Whole Sesame Seeds 250g (Infinity Foods)
Sesame seeds are used throughout Chinese cuisine. Here we use a sprinkling.
Unsalted Roasted Peanuts (1kg) - Sussex WholeFoods
A handful of roasted peanuts is used as a garnish.
Virgin Coconut Oil, Organic 200g (Biona)
A small knob of coconut oil is used to fry the ingredients.
Other Ingredients
- 1 red onion.
- Handful of baby carrots.
- Mushrooms.
- 2 cloves of garlic.
- A small piece of ginger.
Method
- Use one cupful per person.
- Pour the dry millet into a saucepan and turn up the heat.
- Toast until slightly browned and you can smell the aroma. (10 minutes).
- Cover with boiling water so that the water is 2 inches above the level of the millet.
- Place a lid over the saucepan.
- Simmer until the water is no longer visible (10-15 minutes).
- Turn the heat down to a minimum and leave to steam for 5-10 minutes.
