Feta and Pine Nut Cous Cous Salad
- A summery lunch box filler that can be enjoyed hot or cold!
- This healthy and filling salad is a great alternative to sandwiches!
- It also makes a great accompaniment at Picnics and BBQs!
- Bulghur Wheat and Quinoa can be used instead of cous cous if preferred!
Vegetable Stock Cubes - Very Low Salt, Organic 60g (Kallo)
200ml vegetable stock
Organic Lemon Juice 250ml (Sunita)
2 tsp lemon juice
Organic Wholemeal Couscous 1kg (Sussex Wholefoods)
100g wholemeal couscous
Organic Pine Nuts 250g (Sussex Wholefoods)
75g pine nuts
Other Ingredients
2 spring onions
1 red pepper
½ cucumber
6 cherry tomatoes
50g low fat feta cheese (or low fat halloumi)
1 level tbsp green pesto
Method
1) Place cous cous in a large bowl and cover with stock. Cover and leave for ten minutes.
2) Chop the vegetables into bite size pieces and toast the pine nuts on a low heat.
3) Add all ingredients to the cous cous, stir and serve! Alternatively place in the fridge and enjoy cold the next day!
