150g Organic White Rice Flour
Other Ingredients
- Veg of your choice (try courgettes, aubergine, mushrooms, spring onion, peppers, potato slices, etc.)
- Soda water.
- Oil for deep-frying.
Method
- Prepare your vegetables by chopping into strips.
- Heat the oil in a large pan – 180 degrees is the ideal temperature.
- Mix the rice flour and salt with about two-thirds of its volume in soda water (the bubbles in the liquid will make the tempura even lighter and crispier).
- Once oil is hot, dredge the vegetable strips in the batter and place carefully into the oil, taking care not to overcrowd the pan.
- When tempura is cooked, remove with a slotted spoon, drain on kitchen paper and keep warm in a pre-heated oven until they’re all done.
- Serve and enjoy!
