Curried Moong Dal Chilka
A wonderful, warming mung bean dish, full of spicy flavours and guaranteed to fill even the most ravenous tummy!
Mung Dal, Organic 500g (Infinity Foods)
Enough split mung beans to fill you up
Madras Curry Powder - HOT 50g (Hampshire Foods)
Hot Madras curry powder, to taste
Tomato Puree Double Concentrate, Organic 130g (Essential)
A good squeeze of tomato puree
Ginger Paste 150g (Hampshire Foods)
1 tsp ginger paste
Organic Star Anise Whole 100g (Sussex Wholefoods)
1 star anise
Cassia Cinnamon Bark 100g (Hampshire Foods)
1 good-sized stick of cassia
Other Ingredients
1 large onion, chopped
2 large tomatoes, chopped
Extra vegetables or meats of your choice.
Method
1) Boil water in a pan and add the mung beans, star anise and cassia.
2) Leave to boil for about 20-30 minutes.
3) To make your curry sauce, fry off onions and ginger paste, then add your choice of vegetables and cook for a few minutes.
4) Add tomato puree, chopped tomatoes and the curry powder (here you can add as much as you like for your preferred taste).
5) Stir ingredients and leave to simmer on low heat until the mung beans are ready.
6) Finally, drain the beans (pick out the anise and cassia) and mix in with the curry sauce.
