Organic Raisins 1kg (Sussex Wholefoods)
40g raisins
Organic Dried Cranberries 1kg (Sussex Wholefoods)
40g cranberries
Pitted Glace Cherries 500g (Sussex Wholefoods)
2tbsp glace cherries
Organic Coconut Sugar 1kg (Sussex Wholefoods)
30g coconut sugar
Vanilla Powder Grade A 25g (Sussex Wholefoods)
0.5tsp vanilla
Dairy Free Chocolate Chips 500g (Sussex Wholefoods)
70g chocolate chips
Buckwud Canadian Maple Syrup 250g (Rowse)
2tbsp maple syrup
Organic Sunflower Vegetable Margarine 500g (Biona)
70g vegan butter
Organic Plain White Flour 1kg (Doves Farm)
3tbsp flour
Fine Pink Himalayan Salt 1kg (Sussex Wholefoods)
pinch of salt
Other Ingredients
- water
- 1tsp fresh lemon zest
Method
- Preheat oven to 170C.
- Place raisins and cranberries in a bowl, cover with boiling water and soak for 10 minutes. Drain and set aside.
- Chop your almonds and glace cherries into small pieces.
- In a small pan, melt the margarine, coconut sugar and maple syrup.

In a mixing bowl, combine the nuts, lemon zest, cherries, raisins and cranberries. Add the flour and mix well.
- Combine nut mix with melted sugar & margarine and mix well.
- Scoop 1tbsp-size cookies of the mix onto the baking tray layered with baking paper. Bake for 7-10 minutes (until golden).
- Remove from the oven and leave to cool on the baking tray.
- Melt your chocolate chips in a bowl over a saucepan with boiling water. Dip one side of each florentine in the melted chocolate, place on the baking paper and leave to cool
