3 tbsp Ginger Powder

2 tsp Cinnamon Powder
Ground Cloves 50g (Hampshire Foods)
½ tsp Ground Cloves
Whole Nutmeg 50g (Hampshire Foods)

Blackstrap Molasses, Organic 350g (Meridian)
140g Blackstrap Molasses
Pure Vanilla Extract 60ml (Nielsen Massey)
2 tsp Vanilla Extract

1 tsp Himalayan Pink Salt
Other Ingredients
- 80g vegan butter/margarine
- Icing pens to decorate, along with your favourite edible decorations.
Method
- Preheat the oven to gas mark 5. Line a baking tray with baking parchment.
- Sift the flour, bicarbonate of soda, salt, ginger powder, ground cloves, cinnamon, nutmeg and baking powder into a bowl. Set aside for later.
- In an electric mixer, beat together the vegan butter, coconut oil, coconut sugar and vanilla extract.
- Set the mixer to a medium speed and add the egg replacer, followed by one tablespoon of the flour mixture.
- With the mixer still running, add the molasses and the vanilla extract.
- Gradually add the flour mixture, until you have a reasonably stiff dough.
- Wrap the dough in clingfilm and refrigerate overnight.
- When you are ready to use the dough, lightly flour a work surface and remove the dough from the fridge.
- Roll out the dough until it reaches a 1cm thickness. Cut out as many gingerbread men shapes as you can. Place on the prepared baking tray and bake for about 8 minutes.
- Allow to cool on the baking tray for a minute or two, before transferring to a wire rack to cool completely. When cool, ice on your own design with your favourite coloured icing.
