80g Medjool Dates, stones/pits removed

Method
- Grind the Medjool dates (stones removed!), sunflower seeds and coconut oil in a mini blender or powerful smoothie maker with a grinding blade.
- Add the sultanas and blend again. Don’t worry if some of the sultanas remain whole this is fine.
- In a large mixing bowl add the ground almonds, ginger power, allspice powder and banana powder. Mix well.
- Add the coconut syrup and the fruit paste and mix with a fork. Bring the mixture together into a dough ball.
- Then gradually knead in the goji berries. You may find that you can only add 25-30g of Gojis depending on their size. You judge according to taste.
- Use a dessert spoon to roughly divide the mixture into bite sized amounts and roll into balls.
- Store in an airtight container in the fridge until ready to eat. The balls can be stored this way for a week or so.
