Method

  1. Place erythritol in a blender and blend until you reach icing sugar consistency.
  2. In a mixing bowl, combine the peanut butter, blended erythritol, vanilla extract, and salt. Stir until well combined.
  3. Line a mini muffin tin with paper liners.
  4. Place a heatproof bowl over a saucepan filled with water. Bring to boil and melt the chopped dark chocolate along with the coconut oil, stirring occasionally until smooth.
  5. Spoon a small amount of melted chocolate into each paper liner, cover the bottom and sides using a spoon. Place in the freezer for 15 minutes.
  6. Take a small portion of the peanut butter mixture (about 1 teaspoon) and roll it into a ball. Flatten the ball slightly and place it on top of the chocolate layer in the paper liner.
  7. Cover the peanut butter layer with more melted chocolate, ensuring it completely covers the peanut butter.
  8. Repeat the process for the remaining peanut butter mixture and melted chocolate.
  9. Place the muffin tin in the refrigerator for at least 30 minutes, or until the chocolate has set.
  10. Once set, remove the peanut butter cups from the muffin tin and enjoy! Store any leftovers in an airtight container in the refrigerator for up to one week.
