200g cane sugar

50g chopped almonds
Organic Mixed Spice 100g (Sussex Wholefoods)
1.5 tsp mixed spice
Organic Ceylon Cinnamon Powder 100g (Sussex Wholefoods)
0.5 tsp cinnamon

0.5 tsp ground ginger

Other Ingredients
- 1 large apple
- 1 orange
- 200 ml ruby port
Method
- Chop your almonds finely.
- Peel and grate your apple.
- Finely grate the zest of your orange and squeeze out the juice.
- Place all ingredients (apart from the port) into a big saucepan.
- Mix well, set the heat to low and stir gently.
- Simmer, stirring occasionally, for about 15 minutes.
- Remove from the heat and wait until warm.
- Stir in the port and suet and mix well.
- Pour into sterilised jars, seal.
- Store in a cool and dark place for up to 3months.
