Matcha Cupcakes with Tofu Frosting (Vegan)

Method

  1. Preheat the oven to 180°C.
  2. In a small bowl, combine vinegar and almond milk and set aside.
  3. In another bowl, mix flour, 2tbsp matcha, baking powder and bicarbonate of soda.
  4. In a large mixing bowl, mix the oil, sugar and 1/2 tsp vanilla until combined. Slowly add dry ingredients, milk and vinegar and mix well until combined.
  5. Spoon mixture into muffin cases ensuring they are only ¾ full.
  6. Bake for 20-22 minutes. Leave to cool.
  7. Make your tofu frosting. Combine 1 tsp matcha, 1tbsp lemon juice and tofu in the bowl of a stand mixer and beat until creamy and lump-free.
  8. Add 1/2 tsp vanilla, a pinch of salt and stir well.
  9. With mixer on low, gradually add icing sugar until combined.
  10. Decorate your cooled cupcakes and enjoy!
