Sweet ‘n’ Nutty Millet Porridge
This is a smooth and filling porridge that’s comforting, warming and easy on the digestion.
Serves 2-3 people.
Rice Drink with Calcium 1 Litre (Rice Dream)
350ml rice milk.
Organic Millet Flakes 1kg (Sussex Wholefoods)
50g of millet flakes.
Organic Coconut Flour, Gluten Free (1kg) - Sussex Wholefoods
4 tbsp coconut flour
Organic Allspice Powder 100g (Sussex Wholefoods)
2 pinches of ground allspice
Organic Coconut Sugar (1kg) - Sussex Wholefoods
2 tbsp coconut sugar
Pistachios, No Salt 250g (Sussex Wholefoods)
20-30g of raw pistachios, chopped roughly
Organic Maple Syrup, 125ml Pouch (Shady Maple Farms)
1-2 tbsp maple syrup per serving, or according to taste.

Method
1) Add the Millet Flakes and Coconut Flour to a saucepan and pour over the rice milk.
2) Stir and add the Ground Allspice and the Coconut Sugar.
3) Bring to a boil, then simmer for 10-15 minutes or until the porridge starts to thicken.
4) You can make the porridge thinner at this point if you wish by adding more rice milk.
5) Remove from the heat and serve immediately, sprinkling if you like with a generous handful of crushed pistachios and a drizzle of maple syrup.
