Oat Fruit Bars
- These easy-to-make oat berry bars are naturally gluten-free, sweetened with coconut sugar and maple syrup, vegan and extra delicious!
- You can swap strawberries for any fruit jam of your liking (we recommend less sweet ones like strawberry, raspberry, blueberry etc….).
- These bars take about 10 minutes to prepare + 25 for baking.
- Batch cook and enjoy for a quick nutritional breakfast or snack.
- It’s a fantastic recipe to make together with kids.
Organic Jumbo Oats 1kg (Sussex Wholefoods)
300g Jumbo Oats
Organic Virgin Coconut Oil 500ml (Sussex Wholefoods)
85g Melted Coconut Oil
Organic Coconut Sugar 1kg (Sussex Wholefoods)
30g Coconut Sugar
Organic Maple Syrup 330g (Meridian)
85g Maple Syrup
Gluten-Free Baking Powder 500g (Sussex Wholefoods)
1tsp Baking Powder
Sea Salt Fine 1kg (Sussex Wholefoods)
a pinch of Salt
Freeze-Dried Sliced Strawberries 100g (Sussex Wholefoods)
25g Freeze-Dried Strawberries

Method

Preheat oven to 180°C.

Layer a medium size baking pan with baking paper.
- Crumble your strawberries in a small mixing bowl. Add 75ml water and leave to stand for 10 minutes. You want a jam-like consistency – if it’s too thick, add a little bit more water.
- Place 150g oats in a blender or food processor and blend until you get fine powder – oat flour.

Mix all ingredients in a large bowl, except for freeze-dried strawberries.

Press ⅔ of your oat mixture into the baking pan and spread your strawberries on top evenly.

Using your fingers, crumble the remaining ⅓ of the oat mixture on top of your strawberries. Gently press using your fingers or a spatula.

Place in the oven and bake for 25 minutes until lightly browned.

Cool, cut and enjoy!
