Pistachio Overnight Oats
Creamy, nutty and packed with wholesome goodness, these pistachio overnight oats are a delicious way to start the day. Made with homemade pistachio butter, they boast a naturally rich flavour and a gorgeous green hue. Perfect for busy mornings, this recipe is easy to prepare the night before, ensuring a nutritious and satisfying breakfast is ready when you wake up.
Organic Pistachios 500g (Sussex Wholefoods)
Chopped pistachios for topping
Organic Chia Seeds 1kg (Sussex Wholefoods)
½ tsp chia seeds (for extra thickness)
1 tbsp homemade pistachio butter
Ultimate Almond Drink, Organic 1 Litre (Rude Health)
200ml almond milk
Buckwud Canadian Maple Syrup 250g (Rowse)
1 tsp honey or maple syrup (optional)
Pure Vanilla Extract 60ml (Nielsen Massey)
½ tsp vanilla extract
Natural Coconut Yoghurt 350g (The Coconut Collaborative)
2 tbsp yoghurt of your choice - for topping

- fresh fruit for topping
Method
- In a jar or bowl, combine the oats, milk, pistachio butter, maple sweetener (if using), vanilla extract and chia seeds. Stir well to ensure everything is evenly mixed.
- Chill Overnight – cover and place in the fridge for at least 6 hours, or overnight.
- In the morning, give the oats a good stir. If the mixture is too thick, add a splash of milk or water.
- Top with yoghurt, chopped pistachios and fresh fruit. Enjoy!
