Pomegranate Champagne Cocktail
This cheeky beverage is definitely one for the grown-ups! It’s made using crisp, clear Champagne, with a base of natural pomegranate juice. The light gold and deep purple/red colours work beautifully together, making this drink an excellent choice for special occasions or romantic evenings.
This recipe is very simple and easy to make. There are no added sugars or syrups, keeping the flavour fresh, tangy and light.
Pomegranate Juice (Biona) 200ml
50ml per glass
Organic Pomegranate Seeds 250g (Sussex Wholefoods)
A handful to garnish
Other Ingredients
Champagne (or Prosecco, or another sparkling white wine, if you prefer)
Method
1) Pour the champagne into a tall champagne flute. Drop in a handful of pomegranate seeds, which will sink to the bottom (these are optional, however they do absorb the champagne and taste fantastic at the end of your drink).
2) Next, tilt the glass and very slowly pour the pomegranate juice in down the side and into the champagne. The dark juice should slide down and appear to sit underneath the champagne. This creates a gorgeous two-toned effect.
