50ml Olive Oil

Other Ingredients
- 2 medium-sized carrots
- 2 celery sticks
- 1 small red onion
- fresh mint – to taste
- fresh dill – to taste
Method
- Rinse lentils well and drain. Place in a pot, and add water in a 1:2 ratio (lentils to water). Bring to a boil, then turn down the heat to medium and cook until lentils are tender but not mushy. Leave to cool
- Chop your vegetables and shred the carrots.
- Combine the cooked lentils, carrots, red onion, celery, raisins, nuts and seeds in a big salad bowl.
- In a small bowl, mix olive oil, maple syrup, lemon juice and spices, mix well.
- Add your dressing to the big salad bowl with lentils, add chopped herbs and mix well.
- Garnish with your favourite yoghurt and serve with pita bread.
