Red Lentil Tofu

- You can eat it as is just dipped with soy sauce, or season with your favourite spices and fry until crunchy!

Organic Red Split Lentils 1kg (Sussex Wholefoods)
2 cups Red Split Lentils (380g)
Other Ingredients
- 8 cups water (2L) + more for soaking
Method
- Rinse your lentils well. Place them in a big bowl cover them with water, place in the fridge and soak overnight.
- Drain the lentils and rinse well.
- Add lentils to a big saucepan and pour 4 cups of boiling water on top, mix well. Cover and leave to cool. Blend using a blender until super smooth and creamy.
- Place your saucepan over low heat, add salt and mix well. Add 4 more cups of water and bring to boil. Cook for further 15 minutes stirring continuously.
- Pour your tofu mixture into smaller containers and leave to cool. Place in the fridge overnight.
- Remove from the fridge, slice and enjoy!
