Simple Speedy Pizza
Our super simple speedy pizza is the perfect weeknight supper recipe. It’s really less of a recipe, more of a list of assembly instructions. Much healthier than takeaway pizza, but missing none of the glorious flavour!
The toppings suggested here are more of a guide. So add, take away, mix up all your favourite toppings to make your perfect pizza. We’ve used Biona’s wonderful Wheat Pizza bases. We also stock the Spelt bases, as well as gluten-free options by Schar. All our pizza bases are great store cupboard ingredients to have on hand!
Wheat Pizza Bases x 2, Organic 300g (Biona)
2 Wheat Pizza Bases
Greek Extra Virgin Olive Oil 1 Litre (Attis)
2 tbsp olive oil
Tomato Puree, Organic 200g (Biona)
1 heaped tbsp tomato puree
50g grated Applewood Vegan Cheese
Organic Dried Oregano 30g (Sussex Wholefoods)
1 tsp dried oregano
Other Ingredients
- Fresh vegetables (we used spinach, tomatoes, pepper slices and mushrooms)
- Chilli oil (truffle oil would also work so well here!)
- Salt and pepper to taste!
Method
- Remove the bases from the pack. Set the oven to 200°C.
- Brush pizza base with Olive oil. Spoon over the tomato puree. Scatter the grated applewood vegan cheese and top with fresh spinach, tomatoes, mushrooms and pepper slices.
- Sprinkle a teaspoon of oregano and a pinch of chilli flakes and cook for 10 minutes or until the cheese has browned.
- Top with a drizzle of chilli oil.
