Sun Dried Tomato Pasta
Sun-dried tomato paste adds a burst of flavour to pasta sauce. This is a simple but satisfying 10-minute pasta meal with flavours of sun-dried tomato, pine nuts, artichoke and herbs.
Sun Dried Tomato Paste, Organic 170g (Zest)
4 teaspoonfuls of sun-dried tomato paste. The flavour of sun-dried tomatoes is unmistakeable, but many people find that normal sun-dried tomatoes are a pain to use. This paste gives you all of the flavour without the need to rehydrate or chop.
Conchiglie White Pasta, Organic 500g (Biona)
1 cupful of pasta shells.
Organic Dried Basil 75g (Sussex Wholefoods)
A sprinkle of basil.
Organic Dried Oregano 30g (Sussex Wholefoods)
A sprinkle of oregano.
Organic Chilli Flakes 100g (Sussex Wholefoods)
Chilli flakes can be added according to taste.
Organic Pine Nuts 250g (Sussex Wholefoods)
A handful of pine nuts.
Artichoke Hearts in Brine, Organic (Biona)
2 or 3 artichoke hearts, chopped.
Greek Extra Virgin Olive Oil 1 Litre (Attis)
A drizzle of olive oil will help to loosen and dilute the tomato paste.
Method
1) Put the pasta in a pan and cover with boiling water. Bring to a simmer.
2) Meanwhile, mix the olive oil, herbs, chilli, tomato paste and pine nuts.
3) Chop the artichoke hearts.
4) Stop boiling and drain the pasta after 10 minutes, or until the pasta has reached a soft consistency.
5) Mix well and serve.
