Vegan ”Cheezy” Garlic White Beans

  •  2 garlic cloves, minced
  • 200g cherry tomatoes
  • 0.5 cup chopped fresh parsley

Method

    • In a saucepan, heat 2tbsp olive oil over medium heat. Add garlic and fry tossing regularly, until fragrant and golden.
    • Add beans and 100ml water. Season with salt and pepper, taste and adjust the flavour.
    • Cut your cherry tomatoes in halves and add to the pan. Cook, stirring occasionally until warm – about 5 minutes.
    • Stir in the parsley, yeast flakes, and lemon juice
    • Finish with a generous drizzle of extra virgin and sprinkle with some chilli flakes (optional).
