Vegan ”Cheezy” Garlic White Beans

Organic Butter Beans 1kg (Sussex Wholefoods)
250g Dried Butter Beans (or 2 tins cooked)
Engevita Yeast Flakes with B12 250g (Sussex Wholefoods)
2tbsp Yeast Flakes
Greek Extra Virgin Olive Oil 1 Litre (Attis)
2tbsp Olive Oil
Organic Lemon Juice 200ml (Biona)
2tbsp Lemon Juice
Sea Salt Fine 1kg (Sussex Wholefoods)
0.5tsp Salt
Organic Black Peppercorns 100g (Sussex Wholefoods)
freshly ground pepper - to taste
Other Ingredients
- 2 garlic cloves, minced
- 200g cherry tomatoes
- 0.5 cup chopped fresh parsley
Method

In a saucepan, heat 2tbsp olive oil over medium heat. Add garlic and fry tossing regularly, until fragrant and golden.

Add beans and 100ml water. Season with salt and pepper, taste and adjust the flavour.

Cut your cherry tomatoes in halves and add to the pan. Cook, stirring occasionally until warm – about 5 minutes.

Stir in the parsley, yeast flakes, and lemon juice

Finish with a generous drizzle of extra virgin and sprinkle with some chilli flakes (optional).
