75g Icing Sugar
Vanilla Cake Mix 375g (Orgran)
1 vegan cake mix
Organic Mascarice 150g (Mozzarisella)
450g (3 packs) Vegan Mascarpone Replacement
Medium Roast Coffee Beans, Fairtrade 1kg (Black & White Coffee Co.)
100ml black coffee
Organic Vanilla Powder 25g (Sussex Wholefoods)
0.25 tsp Vanilla Powder

- 25ml amaretto (optional)
Method
- Layer a baking dish with parchment paper. Bake your cake according to instructions included on the packet. Cool and slice in half to get 2 layers.
- Brew your coffee to get 100ml.
- In a mixing bowl, beat the softened vegan cream cheese until smooth. Add the powdered sugar and vanilla extract, and beat until well combined.
- Mix coffee with liquor (you can skip the liquor).
- Place 1 layer of the cake on the plate. Gently pour half of your coffee mix trying to cover the whole cake.
- Spread half of the vegan cream cheese mixture evenly over the layer of soaked cake.
- Repeat the layers, starting with another layer of soaked cake followed by the remaining cream cheese mixture.
- Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavours to meld and the dessert to set.
- Before serving, dust the top of the tiramisu with cocoa powder.
