Method

  1. Layer a baking dish with parchment paper. Bake your cake according to instructions included on the packet. Cool and slice in half to get 2 layers.
  2. Brew your coffee to get 100ml.
  3. In a mixing bowl, beat the softened vegan cream cheese until smooth. Add the powdered sugar and vanilla extract, and beat until well combined.
  4. Mix coffee with liquor (you can skip the liquor).
  5. Place 1 layer of the cake on the plate. Gently pour half of your coffee mix trying to cover the whole cake.
  6. Spread half of the vegan cream cheese mixture evenly over the layer of soaked cake.
  7. Repeat the layers, starting with another layer of soaked cake followed by the remaining cream cheese mixture.
  8. Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavours to meld and the dessert to set.
  9. Before serving, dust the top of the tiramisu with cocoa powder.
