Maca Powder, Raw Organic 200g (Sussex Wholefoods)
1 Tbsp Maca Powder
Maple Sugar, Organic 260g (Acadian Maple)
3-4 Tbsp Maple Sugar, 2 Tbsp for the liquid and 1-2 Tbsp for the whipped cream.
Raw Cacao Butter, Organic 250g (Sussex Wholefoods)
6-10g Cacao Butter
½ Vanilla Pod, slit along the middle.
½ tsp Vanilla Extract, for the whipping cream
Coconut Original Drink + Calcium, 1 Litre (KoKo)
500ml Coconut milk drink
Biona Organic Coconut Milk 400ml
66g Coconut Milk, solids only, chilled overnight.

Method
- Chill a large mixing bowl for an hour or so in your fridge or freezer.
- In a milk pan/non-stick saucepan pour the 500ml of coconut milk drink and gently begin warming the liquid on the hob.
- Stir in the maca powder, cacao butter and maple sugar.
- Scrape out some of the vanilla seed from the half-pod and add to the pan along with the whole pod.
- Bring to a slow simmer/gentle bubble stirring now and then. Allow the cacao to melt and the flavours to infuse into the liquid for 3-4 minutes.
- While this is simmering, pour the coconut creamer into a mixing bowl or batter jug. Use an electric whisk to create a foaming froth. Set to one side.
- Remove your chilled mixing bowl from the fridge/freezer. Add the coconut milk solids, vanilla extract and maple sugar. Use an electric whisk to create a smooth, thick cream. Put back in the fridge/freezer until you are ready to serve.
- Remove the pan from the heat and pour into mugs or heat proof glasses.
- Stir in 1-2 tablespoons of the whipped coconut cream into each mugful.
- Spoon over the coconut froth and serve!
