Witches Finger Cookies

Vegan Green Witch’s Finger Cookies are a perfect Halloween treat for those with dietary restrictions or anyone looking for a fun and spooky twist on the classic witch finger cookies. Enjoy these spooky treats at your Halloween party or as a fun, eerie snack.

Other Ingredients

  • 4tbsp water
  • to achieve green colour use food colouring or spirulina powder

Method

  1. Mix 1tbsp ground flax with 4tbsp water and set aside.
  2. Beat softened margarine with sugar and icing sugar in a bowl.
  3. Add flax egg and mix well.
  4. Add salt, vanilla, spirulina and flour and work the dough with your hands until combined. Place in the fridge for at least 45 minutes.
  5. Preheat the oven to 160°C.
  6. Take a small portion of the dough and roll it into a finger shape, about 3-4 inches long. Place it on the prepared baking sheet.
  7. Use a knife to make knuckle indentations in each finger.
  8. To make the “nails,” gently press a whole blanched almond into the tip of each finger. You can use a small amount of water to help the almond stick if needed.
  9. Bake for 17 minutes, remove from the oven and leave to cool.
  10. Decorate with your red jam and serve 🙂
