Witches Finger Cookies

Organic Blanched Almonds 1kg (Sussex Wholefoods)
blanched almonds - to use as fingernails
Organic Plain White Flour 1kg (Doves Farm)
360g flour
Organic Ground Brown Flaxseed, Gluten-Free 500g (Sussex Wholefoods)
1tbsp ground flax
Organic Sunflower Vegetable Margarine 500g (Biona)
220g vegan margarine
Organic Icing Sugar 1kg (Sussex Wholefoods)
110g icing sugar
Vanilla Powder Grade A 25g (Sussex Wholefoods)
0.5tsp vanilla
Fine Pink Himalayan Salt 500g (Sussex Wholefoods)
a pinch of salt
Strawberry Fruit Spread 284g (St Dalfour)
strawberry jam to decorate and dip
Other Ingredients
- 4tbsp water
- to achieve green colour use food colouring or spirulina powder
Method
- Mix 1tbsp ground flax with 4tbsp water and set aside.
- Beat softened margarine with sugar and icing sugar in a bowl.
- Add flax egg and mix well.
- Add salt, vanilla, spirulina and flour and work the dough with your hands until combined. Place in the fridge for at least 45 minutes.
- Preheat the oven to 160°C.
- Take a small portion of the dough and roll it into a finger shape, about 3-4 inches long. Place it on the prepared baking sheet.
- Use a knife to make knuckle indentations in each finger.
- To make the “nails,” gently press a whole blanched almond into the tip of each finger. You can use a small amount of water to help the almond stick if needed.
- Bake for 17 minutes, remove from the oven and leave to cool.
- Decorate with your red jam and serve 🙂
