Bird's eye chillies are some of the hottest in the world, so you really can use a small amount and get a huge kick of flavour from them.
You can use these whole, finely chop or grind them down - whatever suits you and your dish best. Bird's eye chilli peppers are used extensively in Thai, Vietnamese, Malaysian and Indonesian cuisines. These can be added to salads, stir-fries, curries, sauces, sambals, soups, and marinades.
