Dried limes are used in Persian cuisine to add depth and complexity to a dish. Dried lime slices have a much stronger and more concentrated flavour to that of fresh limes. They become naturally light brown coloured on the outside and brown to black in the middle once dried. Lime slices still taste very much of lime with a lovely sour kick and a slight, pleasant bitterness. Those who enjoy the sharp, crisp flavour of limes, lemons and grapefruit will find these slices very satisfying.

Using Dried Lime Slices

Sliced limes can be dropped into Persian stews which may contain lamb, chicken or fish. If you wanted to add tang to rice, add a few lime slices to rice as it boils, to allow the flavour to infuse through the water. You can also use lime slices like a seasoning. For instance, chop up finely and scatter over fish or meat about to be grilled with a drop of oil, herbs and other spices of your choice. When added to boiling water, these sliced limes add a distinct lime flavour which is great for tea making.

Dried lime slices do not require pre-soaking and can be eaten whole (skin and all).
