Cinnamon Quills are very delicate - often referred to as "true" cinnamon. They are much finer and sweeter than Chinese cinnamon (cinnamon bark), though are still suitable for both sweet and savoury cooking. Compared to Cassia Cinnamon, Ceylon Cinnamon contains significantly lower amounts of coumarin.
Uses
Cinnamon sticks/quills can be used to make warming winter drinks like mulled wine, mulled cider and herbal tea. They also provide delicious flavouring for cream, custard, sauces and other puddings. They're not too sweet for savoury meals either, and can be incorporated into curries or rice dishes.
Simply break the whole cinnamon quill into your dish/drink and allow the flavours to infuse. When serving, you may find it preferable to remove the pieces of cinnamon.
