Cous cous is a traditional staple food of North Africa, particularly Morocco. This wholegrain cous cous is just as easy to make as normal cous cous - simply add boiling water, cover and leave to stand for 5 minutes.
Directions
Cous cous is incredibly simple to prepare. Simply place the cous cous in a bowl - 1 cup per person - and add just enough boiling water to cover the cous cous. Cover the bowl with a lid or plate, and leave for 5 minutes.
Alternatively, you can use the short-cut method: cook your normal dish in a large pan, and stir in the cous cous at the end. For example, prepare a Moroccan-style curry using harissa and other spices, and add the cous cous about 5 minutes before the end of cooking. Ensure that there is enough sauce, as the cous cous is quite absorbent.
