Cashew nut and Cucumber Salad - Recipe

A cool and crunchy deli dish that is great as a main or a side dish!

Packed with protein, nutrients and essential fatty acids, this salad is a great dish to keep your energy levels from slumping!

It also makes a great accompaniment at Picnics and BBQs!

We served our salad with pink salmon on the side, to make it vegetarian friendly swap the salmon for quorn fillets!

Ingredients:

Method

1) spread the cashews evenly onto an over tray and place in the oven on a medium heat for 5 minutes (shaking half way through to ensure even toasting!) Chop all vegetables into small pieces.

2) Mix lemon juice and BBQ seasoning well and stir into your finely chopped vegetables.

3) Stir in toasted cashes and salmon, sprinkle with Nori Flakes and serve! Alternatively refrigerate and serve chilled.
