A massive bag of garam masala that will last you about a year
This is a whole garam masala that you crush immediately before use. Whole spices keep for a longer period of time than ground spices. In addition, because the flavours are released immediately before cooking, whole spices are far more flavoursome.
For best results, heat gently in a pan for 2-3 minutes before crushing. This will loosen the essential oils within the spices, and hence release more of the aromas. You can crush with a mortar and pestle, but failing this, a rolling pin or cricket bat will do. In India, they use a big stone.
Directions
Heat gently in a pan as described above, before crushing/blending. Add after cooking the meat/vegetables, adding liquid at the same time. The garam masala will absorb some of the liquid and help to thicken and reduce it. Add chilli separately (as much as you like).
Cook until you feel that it is done: there are no hard and fast rules.
Coriander seeds, cumin seeds, cinnamon sticks (though we think that they are really cassia sticks), whole pepper, whole cloves, whole cardamom, whole star anise and whole bay leaves.
