Bamboo shoots are naturally low in carbohydrates. This makes bamboo fibre great for anyone following a keto or low carb diet, as well as those who may be looking to reduce their cholesterol. Bamboo is also known for it's contents of vitamins and minerals, such as: Vitamin A, B6 and E, thiamin, riboflavin, niacin, folate, pantothenic acid, calcium, magnesium, phosphorous potassium, zinc, and iron.
Bamboo is great to use in baking and not just for the added fibre. It is a great thickener, bulking agent, and binds wonderfully with liquids. You only need 1g of bamboo fibre to 10g of water (or 8g of oil) for high water retention. This makes it useful in keeping dough soft and fresh, though alternatively it can help with baked goods to have a crispier texture. It all depends on the process.
Whatever you bake with added bamboo fibre will typically have the perfect texture outcome - for example, a roll will be soft on the inside but crispy on the outside. It can also be used as a low-calorific additive to avoid moisture loss and to preserve the taste of food products. You can also use bamboo fibre to make a very creamy frosting or icing!
