White Maize Meal

The difference between maize meal and cornmeal can cause confusion as maize & corn are technically the same thing. There are many variations of the maize/corn plant and therefore maize meal and cornmeal have become different by-products.

Maize meal is popular in Africa and Asian cooking. It can be used to make flat breads, pancakes and tortillas. Note that most such recipes mix maize meal with a binding flour such as potato flour or normal wheat flour.
