Using Millet Flour
Millet Flour can be incorporated into both sweet and savoury recipes. For use in baking, it will require additional agents to help the dough stick together. Xanthan Gum will do this. Bicarbonate of Soda and Vitamin C Powder will help create air bubbles and moisture in the mix.
Note: Millet flour, used as a single flour component is not suitable for bread recipes. The consistency would be too crumbly because it doesn't rise - hence why millet flour is more suitable for flat breads and pancakes. Usually in bread, cake and muffin mixes, millet flour is accompanied by other flours, which includes wheat flour, rice flour or buckwheat flour.
