Millet flour is a good source of protein and dietary fibre - it has both soluble and insoluble. The insoluble fibre within millet is also known as a prebiotic, so it can help support your gut health which makes this flour a good alternative to wheat.
This product can be used to completely substitute wheat and other gluten based flours, however it is also great to use mixed with another gluten-free flour of your choice. It really depends on the recipe and what you're making. Millet flour unfortunately won't raise by itself, so we suggest using our Gluten-Free Baking Powder to help.
