Buckwheat flour can be used as an alternative to wheat flour. Because it is gluten-free, you may like to add "binding" ingredients such as egg, tapioca flour or xanthan gum. You can also mix buckwheat with stronger flours such as potato flour.
Buckwheat flour can be used to make excellent gluten-free pancakes. Simply make a batter using buckwheat flour, egg, milk and a pinch of salt. Leave the batter to stand in a refrigerator for 15-20 minutes, then spoon a small amount into a small lightly greased non-stick pan and fry.
