Buckwheat is not a cereal and therefore is not related to wheat (despite its name). Buckwheat flour is a gluten-free alternative to wheat flour. Buckwheat is a versatile grain, and the flour it produces is particularly good for making pancakes and scones, and even noodles if you are feeling adventurous.

Directions

Buckwheat flour can be used as an alternative to wheat flour. Because it is gluten-free, you may like to add "binding" ingredients such as egg, tapioca flour or xanthan gum. You can also mix buckwheat with stronger flours such as potato flour.

Buckwheat flour can be used to make excellent gluten-free pancakes. Simply make a batter using buckwheat flour, egg, milk and a pinch of salt. Leave the batter to stand in a refrigerator for 15-20 minutes, then spoon a small amount into a small lightly greased non-stick pan and fry.

You can also use buckwheat flour to make buckwheat noodles, though ready-made buckwheat noodles are also available.
