Fenugreek is a warming, savoury spice with a complicated curry-like yet bitter flavour. The seeds are used frequently in Indian cuisine to add a more interesting taste.
Fenugreek is commonly taken as a supplement for a wide range of purposes. Fenugreek is believed to improve the digestion, lower cholesterol levels, assist the immune system and even though to assist those with mild diabetes.
These seeds can even be sprouted to make little micro-leaves. These have many additional nutritional qualities, such as: Vitamin A, B1, B2, B5 and D; Iron, Phosphorus, Niacin, Pantothenic Acid as well as Choline.
Directions
Fenugreek is used in curries, adding a strong aromatic flavour. Bash the seeds into a powder using a mortar and pestle, or use a blender or spice grinder. Add to the pan at an early stage (usually with the onions).
You can also sprout these seeds using a germinator or jar, and eat the sprouts and micro-leaves in a salad or cook them into Indian breads.
If taken as a supplement, a small handful of seeds (around a quarter-teaspoon) taken daily with water will suffice for most purposes.
